The floral honeys begin to be produced when the honey bees collect the nectar of the abundant flowers of the florest. in this step the pollination of the wild flora occurs. The collected nectar is enriched with the bee's ensymes and then stored into the cells in the honeycombs with a cap of wax, showing the beekeepers that the honey is mature and ready to harvest. Every honey has particular characteristics which depend on their floral or extra floral composition, on the season and the weather conditions of its geographic origin. Because of its floral prigin, some bee honeys may crystallize naturally or by effects of the time and the decreasing of temperature. This crystallization can be reverted by means of heating into a water bath 10-15 minutes (depending on the amount of honey).
